This very much depends on your needs, or your clients needs. Prestashop has been around longer, has many features Shopify doesn't (eg. can be installed as a standalone app on your own server). Pricing is different, plugins are different, tech stack is different. You'd need to research and compare both. They're both modern and mature platforms at this point.
