You can start by bechmarking , bechmark on your competitors , from my prespective if you have a competition is a good start for defining your targeted audience , specially if they are selling the same product or service , you can study their followers what they seems like , take a portion from their social media fans and study what are their demographic information , at leat you have an idea where your competitors are selling their product , there are some tools can help you for this task and can can give you some information about the audience that competitors are reaching (semrush for exemple)
this strategy can provides you with information that can help you to begin digging deep on your target audience , one you have at least a demgraphic idea for you audience , you can launche some online surveys in based on those information that you had , or simply run some A/B testing ads you collect more information about that audience and what their interest and so on...
