Good morning, I need to update the version of php (7.4) and I have prestashop 1.7.8. What is the correct procedure to avoid blocking the site?

Try using the same .htaccess that you use today for PS1.7.8 (save it as .htaccess, to be safe, and use it after you upgrade PHP).
